I dont know about other people but my Demon does this to me a lot, unrecognized device. I usually need to unplug the power to the 360 for 10-15 seconds, then power it back up and my PC will detect it.
Sadly though when doing a dump or write in jrunner, it may error out, and then same thing. I wont be able to toggle with the adapter button, and if I disconnect/reconnect the USB, unrecognized device.
What seems to work for me is plug power into the 360, then plug in USB.
Then do a nand dump in the demon application, not jrunner. If it doesnt error, then it looks like a "good" connection. Then I open Jrunner and do what needs doing.
It seems to die more frequently if I go right into using Jrunner.

I plan to remove this weekend and put in a different system, hopefully the behavior will change.

well Demon Toolbox install instructions say theres a checkbox for the drivers.
I havent done it in over a year so I don't recall.
Try uninstalling the toolbox, then reinstall. theres a good chance the demon drivers would be in the toolbox directory as most apps leave the driver behind for reinstallation purposes.

JRP drivers will not uninstall anything. I've seen this issue before. It's either the ribbon cable not installed properly (which is easy to mess up) or an install problem with the Demon itself. I think you should post images of your install. Your most likely chasing the wrong problem.

And besides, the Demon does not have to be hooked up to install the drivers. That's the way USB devices work with an auto installer such as ToolKit. ;p

Also you shouldn't need to desolder the whole demon to test.
As long as the power cord is not connected to the 360 at all, you should still be able to connect a micro usb in and set it to pc.
you cant do switch on PC AND have the power plugged in.

Just do what @TheGlow said, I have done this many times without any issues. Just remember to switch back..

Are you using the micro USB plug or the mini USB plug via the extension board?
