I recently started the Gamefly trial for 10 days so I'm wondering if this is possible.

I was thinking of installing the games to my Xbox's HDD when I receive my rented games from Gamefly and then using one of those softwares to make a copy of the game.

I don't have a modded Xbox 360 or anything so would it be possible to run the game when its installed to my HDD with a burned copy?

What you are asking if is possible is, but you will need to RGH your system, then you will be able to play a ripped backup of your disks from the HDD without the disk in the drive. This can also be done with an ODDE (Optical Disk Drive Emulator).
Backups of Disks that you own can be run with a simple firmware mod.
