What happens with jtag/rgh and microsoft updates? They do something like banning the console (while updating for upgrading f.e from 2.0 to 3.0)? Do I need to solder the coolrunner anyway even if I only wish to extract the key from the mobo?

This isn't really a suitable question, you shouldn't even think about applying an official update to your JTAG/RGH (unless you are installing Avatars and Kinect of course).
If you wish to update your drive's firmware for your JTAG/RGH console, you can do so and there is not need to go back to stock first.

Yes, you need to install the CoolRunner and write XeLL to your NAND in order to retrieve the DVD key (if you can't get it from the drive for some reason).
