I just wanted to post here and say thanks to everyone for posting such useful information - after a lot of reading i've sat down tonight and succesfully dumped the NAND from my 360 using the NAND-X.
I've not soldered in at least 20 years so I was somewhat cautious about the process - as i'm planning on using the RGH in the future i've started by installing a QSB kit for the CoolRunner. I could then use the pin headers to dump the NAND and i'll pick up the CoolRunner in a few days and get that installed.
To fellow noobs the best advice I can echo is to always use flux and take your time. I was very very careful about the amount of solder I was applying as it's easy to overload the joint and have it spill over to ajoining points.
I obviously can't be sure that all of the points are connected properly but an inspection with a magnifying glass suggests so. The NAND dumped succesfully and the console boots with no problems - so onto stage 2 now - which is installation of the CoolRunner. Before doing so though i've got some old busted motherboards which i'm going to spend some time practising on.
