So I'm new to the scene and heard about having a NAND backup to help save brick switch (Pokemon let's go incident). However I already install CFW and on the latest SX OS currently. Do I do a backup now incase something like a soft brick switch happens in the future?

You can always do NAND backu whenever you feel like doing it.
It is like taking a snapshot of that moment of your sysNand to backup files.

Yes you can backup whenever you want, I do this myself everytime Nintendo do a big update, So I have one for current 6.2 and will do another when we have 7x support
Not sure if anyone knows the answer to this but is it "suspicious" if u were to restore a NAND after did certain things online?

For example, lets say I went on clean NAND, did a bunch of stuff like download eshop games, then I restored NAND again and now those games are missing. Is it suspicious that all of a sudden my switch went back in time? Or even a better example, what if I restored 7.0 NAND after it was upgraded to 7.0.1?

Right now I'm playing it extra safe and always backing up NAND if I plan on doing anything that will required me to restore NAND again.

You would have to update back to 7.0.1 to connect to Nintendo's services and yes since you booted CFW you can be banned. It may not happen the first time or right away.
