Switching Switches with my kids

Hey all. New to the Switch CFW world.
So my kids have a Switch on 6.2 OFW. I have my nintendo ID on there also. They have all their games, saves, etc on it. I do not have a Nintendo switch online account.
I bought a new Switch (coming in a few days) so I could use theirs (6.2) for my CFW fun. I know the new one (most likely) cannot be modded.
Question is, how do I, if at all possible, get all of the game saves off of the old Switch and onto the new Switch for them?
I looked at transferring the systems' data, but that requires connecting to the internet, per Nintendo's instructions, and I didn't know if I would need to update the old Switch (6.2) in order to do the swap. I am not going to update either way, I just don't want to tell my kids their BOTW save got "lost"
I really hope that makes sense.

If the new switch CAN be modded, then you can use Checkpoint to backup and restore saves.

Outside of that, you would have to use the official method of transferring the data

Do you know if I can do the official way without having to update the 6.2 OFW? I assume I need to since every time I connect it queues up the OFW update. I know I can clear the queue by going into maintenance mode, but I don't want to be a guinea pig and risk updating past 6.2.. ;)

Yeah, most likely you would need to update it to the latest firmware. If your modded switch is banned (or will be banned when you connect it online) this may prove to be a difficult task for you.

I guess I'll wait until I get the new Switch and see what happens when I try the system transfer. My old Switch has not been modded yet. I have been staring at the SX Pro dongle for a few weeks now contemplating the leap...haha.
Maybe it'll be a good humbling lesson for my kids if their Switch was "accidentally" factory reset(replaced with the new one).
