Yesterday i went to update my daughters phat 360 with a DG-16D2S fw ver: 74850C. Flashed back to stock and then put dummy in souce but jungleflasher selects lt+ 1.1 everytime. Why would this happen.

you are using the old dummy so you need to manually load 2.0 to target

Though you do need to update your junleflasher that is not your problem. When you go to the mtk flash tab does your drive show up as a 0251c instead of a 7000? I bet it does. The reason it autoloads lt1.1 is because that is the most current firmware for the liteon 7000. Your drive probably changed to 0251c because it changed after the 13146 dash update. Either redump your firmware as it is now or put the dummy you have into source and manually select your target as 0251c Lt+2.0 firmware and press the spoof to source button and after that you can flash.
Thanks alot guys, i'm using the latest jungleflasher but with me being quite new at this i forgot that the firmware will have changed with dash update to 02510C . My daughters 360 has not got the latest dash so its gonna only select lt 1.1 ain't it, so would it be best to put it back to 74850C stock and update the dash then use probe 3 and get new dummy and that will then give me the lt 2.0 option yes.

Update it to the latest dash, then use the Probe 3 to do a new PHATKEY extract, flash it as a "fresh" drive. 
you need to update the dash or you'll end up with problems as 2.0 is for dash 13599
